Thai Green Chicken Curry
A family favourite of ours! This is my quick go-to, healthy meal that even the kids love. I cheat and use the pre-made curry paste that has mostly natural ingredients and it lasts a few meals so is cheap.
Serves 4
Ingredients:
About 600g chicken breast ( or do x2 packs and cook bulk for leftovers)
1-2 heaped cup Valcom Green Curry Paste (start mild and can add more if like it hot)
1 can organic coconut cream
1 tbsp fish sauce
Vegetables: Green beans, zucchini, broccoli, carrot etc
Serve with rice or lower carb option: no rice or cauliflower rice (buy in frozen section)
Method:
Lightly fry the curry paste for a minute in olive oil. Add half the can of coconut cream and allow sauce to thicken for a minute. Add diced chicken and simmer, add rest of coconut cream. Add fish sauce.
Simmer on medium heat for about 15 minutes. While the curry is cooking, steam vegetables (green beans, broccoli, zucchini) in a pot. I prefer to do cook these vegetables seperate so they don’t water down the curry.
Serve with rice or for a low carb alternative use the frozen cauliflower rice you can buy at supermarket or enjoy without rice (its very satisfying).
