Mushroom, Leek & Spinach Quiche
Love a quiche to change up your lunches from boring to delicious! Whip this up for lunch on Sunday and enjoy some leftovers through the week.
Ingredients:
8 eggs
1 cup mushrooms
1 leek
2 handfuls spinach
1 cup grated cheese
1/4 cup cream
Method:
Heat fry pan, add a little butter and sauté sliced mushrooms and thinly sliced leek.
In a bowl add eggs, cream, salt and pepper and whisk.
Line a quiche dish with one sheet puff pastry (lightly oil dish first so doesn't stick).
Add mushrooms and leeks to egg mixture and pour into quiche dish.
Bake for about 25 mins at 170 or until set in the middle.
