Sweet High Protein Omelette

Feeling like something sweet? Try this high protein, sweet omelette you can serve with berries yogurt and sugar free maple syrup. Eggs are a wonderful source of nutrients including choline, selenium, iodine, omega 3, Vitamins A, D, K & E to name a few.

Ingredients:

  • 2 whole eggs

  • 1/2 cup egg whites (zeagold) or serve of protein powder

  • Dash of vanilla essence

  • 1 small banana

  • 10g coconut flour

  • 1 tsp butter for cooking

    Toppings: frozen blueberries (thaw if you like), Kalo greek yogurt, sugar-free maple syrup.

Method:

  1. Heat fry pan, add a little butter or coconut oil.

  2. In a bowl add mashed banana, eggs, egg whites, coconut flour and vanilla and whisk or blend until smooth.

  3. Cook in the frypan like pancakes.

  4. Serve with berries, unsweetened yogurt and sugar-free maple syrup.
