Chocolate Chip Chickpea Cookies

Try them out and see if your kids like them for a healthier sweet treat for lunchbox. My 6 year old likes them, while my 3 year old wasn’t entirely convinced - never mind, more for me!

Ingredients:

  • 1 Can chickpeas

  • 1 Cup Oats

  • 2 medium bananas

  • ¼ Cup brown sugar

  • 1 teaspoon vanilla

  • 1 teaspoon baking powder

  • ¼ Cup dark chocolate chips

Method:

  1. Heat the oven to 180 degrees. Drain the chickpeas and rinse thoroughly.

  2. Place all ingredients excluding the chocolate chips in the food processor. Blend until smooth.

  3. Take out the blade, add the chocolate chips and mix through with hands.

  4. Place spoonfuls of mixture onto lined baking tray, press down gently with fork.

  5. Bake for 25 mins.

  6. Remove from the oven and cool on the tray.
