Yogurt and Blueberry Muffins

These make a great lunch box treat for kids made without too much sugar and packed with yogurt and milk (protein) making them a more balanced sweet snack. 

INGREDIENTS

2 1/2 cups flour (plain or wholemeal, often I’ll do a mix of both)
1 Tbsp baking powder
1/2 tsp baking soda
1/2 cup sugar
1/2 tsp salt
2 eggs
2/3 cup olive oil
1 cup unsweetened yogurt
1/4 cup milk
1 1/2 cup blueberries

METHOD

  • Preheat the oven to 190C

  • Combine all the dry ingredients in a bowl

  • Combine the eggs, oil, yogurt, and milk in another bowl or jug.

  • Add the wet ingredients to the dry. Stir until just combined. Fold in the blueberries. Add a tiny bit more milk if the mixture still seems too thick (the consistency of the batter can vary depending on which brand of yoghurt you use). The batter will be fairly thick, but not dry.

  • Spoon the batter into greased muffin tray. Bake for about 15-20 minutes or until golden.
